Healthy Eating Habits

How many of us say that come the new year we’re going to start eating healthier, exercising, etc. Raise your hand.

Well, I’m saying it. Actually mine is a continuation of a clean eating diet I started about 6 months ago. Since I’ve been doing this, I’ve lost a bit of weight and I feel a lot better. But there are times when I do miss a good fast food burger and fries. And the good thing is I can still have a burger and fries – use leaner ground beef and oven bake your fries. Still pretty delish

I love, love Quiche and to my surprise one of the recipes was Quiche. Here’s the recipe.

Mini Spinach, Pepper, and Cheese QuichΓ©

– 1/2 Tbsp Avocado oil
– 1/2 red bell pepper, diced
– 2 cups chopped fresh baby spinach
– 3 eggs, lightly beaten
– 1/2 cup shredded sharp white Cheddar cheese
– 1/4 tsp salt
– 1/4 tsp freshly ground black pepper


  1. Preheat oven to 350Β° F
  2. Coat 4 muffin cups with avocado oil or cupcake liners
  3. Heat avocado oil in skillet over medium-high heat. Add the bell pepper and spinach and cook until pepper is soft and spinach is wilted, about 4 minutes. Stir frequently. Transfer mixture to colander to drain excess liquid
  4. In a bowl, combine the eggs, spinach-bell pepper mixture, cheese, salt, and pepper; then pour into prepared muffin tin
  5. Bake for 15 minutes or until set. Cool in muffin tin on wire rack for about 5 minutes

Prep Time: 10 minutes. Cooking Time 15 minutes + 5 minutes to cool
